Good old Aussie damper
|
Damper is pretty popular & especially when us Aussies go camping. You can whip it up in minutes. Damper doesn't keep well so i suggest you eat it on the same day as you make it. YOU WILL NEED: 3 cups self-raising flour 1 1/2 teaspoons salt 90g (3oz) butter 1/2 cup milk 1/2 cup water extra flour 1. Sift flour and salt into a bowl, rub in butter until it resembles fine breadcrumbs. 2. Make a well in the centre of the dry ingredients, add combined water and milk all at once, mix lightly with a sharp knife in a cutting motion. Turn out on to lightly floured surface, knead light. 3. Knead dough into a round pie like shape appox. 15cm (6in) Place on greased oven tray, with a knife, cut 2 slits across the dough like a cross approx 1cm (1/2in) deep. Brush top of dough with milk, sift a little extra flour over dough. Bake in a hot oven for ten mins or until golden brown, reduce heat to moderate, cook a further 15 mins. Or if you are camping: do all the above but remember to use a preheated camp oven or throw in coals and cover with coals for 15 to 20 mins, brush off coals and enjoy !!
